Below is a different twist on traditional stuffing…perfect for those looking for a low-carb or vegetarian option!
Cauliflower Stuffing
4 tablespoons butter or vegan butter
1 onion, chopped
2 large carrots, peeled and chopped
2 celery stalks, chopped or thinly sliced
1 small head cauliflower, chopped
8 oz baby bella mushrooms, chopped
¼ cup freshly chopped parsley
2 tablespoons freshly chopped rosemary
1 tablespoon chopped sage (or 1 teaspoon ground sage)
½ cup low-sodium vegetable broth
Salt and pepper to taste
In a large skillet, over medium heat, melt butter. Add onion, carrot, and celery and saute until soft, 7-8 minutes.
Add cauliflower and mushrooms, and season with salt and pepper. Cook until tender, 8-10 minutes.
Add parsley, rosemary, and sage, stirring until combined. Add broth and cook until totally tender and liquid is absorbed, 10 minutes.
Nutrition per serving: 90 calories, 6g protein, 3g carbohydrates, 1g fiber, 2g sugar, 6g fat, 2g saturated fat, 230mg sodium.
